Summary

The emergence of new pathogens and the intensification of agro-livestock production associated with a change in dietary habits, with the increased consumption of vegetables consumed raw, amplified the risk of transmission of pathogens, often resistant to antibiotics,
In order to reduce the microbial load and possible eggs of parasites, is recommended to the operators of grocery stores to wash the vegetables to be consumed raw, these being the responsible for providing consumers with a product free of dangers to health, without determining what measures to be implemented for these end...they should identify all stages of their activities crucial to ensure food safety and ensure the creation, implementation, updating and enforcement of security procedures appropriate, ".
With this project we seeks to assess the risks associated with consumption of fresh vegetables consumed raw, listing both the production system and the method of cleaning them.
