Identify specific requirements of each normative reference;
Interpret the adaptation to aquaculture activities of more generalized normative requirements;
Perform documentation of management and certification systems;
Apply auditing techniques to Food Safety systems, identify and correct non-conformities;

Know how to identify the most appropriate normative references in each case;
Know how to apply, manage and audit the references;
Know how to interpret labeling and certificates.

Contents

1. Analysis of SDGs and indicators applicable to aquaculture exploitations;
2. Certification for aquaculture companies based on 3 ISO Management Systems: Quality, Food Safety and Environmental Management.
Specific requirements: Food Safety, Traceability, Biodiversity, Animal Welfare, Life Cycle.
3. Certification schemes, Management Systems certification seal supported by ISO Standards, Audit methodologies;
4. Specific standards in the area of activity: Aquaculture Stewardship Council. Environmental and Social Certification of the production chain to the sale.
5. Product, packaging and labeling certification.

6. Organic production method certification
European legislation, references, product certification through process control, control plan, auditing, certifying entities, certification processes.
7. European Quality Marks for products and processed products: DOP, IGP and ETG.

Teaching Methods

1. Theoretical-practical classes (TP):
- exposition, analysis and discussion of normative references;
- construction of simulated practical cases of application;
- practical realization of supporting documentation for certification schemes;
- seminars and case studies,
2. Study visits to units of exploration, processing and/or sale of aquaculture products.

Assessment

Final grade = 0.2 CT + 0.6 CP + 0.2 CS
Theoretical component (CT): test
Practical component (CP): simulated practice group work
CS component: presentation of seminar reports and study visits.
